Oak chips are an alternative to the more expensive barrel, if what you are searching for is to give a product the characteristics oak provide. Staves transmit aromas and tannins, especially when they are manufactured with the same wood as the barrels; such is the case of AROBOIS chips. One advantage of this product is that they contain very little air, in comparison to the barrels.

After two or three uses, a barrel looses all its properties so it stops contributing aromas and flavors to the wine. If you put oak chips into these very same barrels you are extending their life and are able to profit the barrels for a longer period of time.

The different toasts allow different aromas and flavor to develop in the oak. Light and medium toasts will give vanilla flavors, while the strong toast will contribute a flavor similar to smoke.

The ideal way to use chips is combining different levels of toast to try to obtain the complexity of flavor and aromas that an oak barrel aged product has.
